Hello,
I am a student in a translation program, and this term appears in a short assignment, due Friday, in which I have to translate a short medical text. The term comes from a document about the low-FODMAP diet, a diet used to manage certain gastrointestinal conditions, from the website of Centro Júlia Farré, a center for nutrition and psychonutrition based in Spain. More specifically, this term comes from a table listing low-FODMAP foods. The document appears to be intended to educate non-specialists (people with gastrointestinal conditions such as IBS) about the FODMAP diet.

I have translated this term as "tofu (plain or firm, drained)". However, I am not sure if "tofu simple o firme" actually should be translated as "firm tofu", or whether "tofu simple" and "tofu firme" refer to different types of tofu (firm vs. extra firm, etc.).

Any feedback would be greatly appreciated!

regular or firm tofu, drained

In This Can't Be Tofu! (written way back in 2000), chef and cookbook author Deborah Madison said that firm (you may see it labelled as "regular") tofu was her all-purpose choice. "If you're going to buy tofu but don't know how you're going to use it, you'll be safest buying regular or firm tofu," she wrote.

simple tofu, firmly drained tofu

It's a recipe with:
Grains and pulses of vegetable protein such as split peas, chick peas or lentils, simple tempeh, which is a soybean baked pasty or fermented soya beans, simple or firmly drained tofu or quorn.

With tofu it's a process of removing water or moisture from the cooked or defrosted tofu. Apparently, there's a specific method of pressing moist tofu, allowing it 30 minutes which should be enough time to dry it and let it get crisp. It was possible to shallow fry tofu then remove it from the oil and let it dry or add to a stir fry or salad.

Other vegetables can be boiled in water, then once they're cooked, the vegetables can be drained by removing them from a saucepan of water, sometimes with a plastic colander or a metal sieve, also useful for washing salad.
