agree Andy Watkinson : I've always heard this referred to as "Shrinkage".

Thank you Andy! me too! And for the benefit of AMM, that is precisely what I meant by shrinkage, in AMM's terms, stock lost to theft or in-house soiling, for which a premium is added as cover, to the retail price of all goods.

scrap and overstock/surplus fabric

This seems to be about the circular economy and sustainable production:

"merma" could be scrap fabric:

Saldos could be deadstock/overstock/surplus fabric:
https://www.quintatrends.com/2021/10/Chava-Studio-moda-lenta...

Leftover fabric or “deadstock” is often claimed as a sustainable alternative to virgin materials in the fashion industry and beyond, but it may not be the quick fix to the bigger waste problem we believe it to be.

agree neilmac : "Scrap" fits the sustainablity angle nicely ...

Thanks Neil, yes!
agree Adrian MM. : AB - rude & oblivious to the euphemism of 'shrinkage' for UK/London West End dept-store staff pilferage & garbling 'premium' for a mark-up - ought to have researched before shooting from the hip: https://www.bonjourquilts.com/scrap-embroidery-tutorial

Thanks Adrian! Indeed, and I was surprised to get the red pen treatment as scrap (fabric) is a term I imagined all native English speakers would know, and thanks for providing a reference for the doubters.//Interesting... My answer was "scrapped" anyway!
neutral Andrew Bramhall : but you're still wrong, because you used the word 'scrap' in the SINGULAR,when you really meant 'scrapS'[ you've answered your own question ; fabric scraps= reusable remnants; scrap fabric= thrown away as useless..

So you gave me a Disagree to discredit my answer and now you're calling me IGNORANT? What's next? You got the points, move on.// You may have edited out the insults and changed the disagree to a neutral, but an apology would be nice.

Thanks, should have embroidered (!). And this here is interesting:What is scrap fabric called? Carbage or cabbage, and more rarely garbage, is the name given to the bits of fabric left over from cutting out an item
