He walked into a dance club, receiving a nod of acknowledgement from one of two doormen who looked as if between them they kept the German steroid industry in business.

they were big and muscular
Athletes (illegally) use steroids (to be precise, anabolic steroids) to "bulk up" and get more muscular. The sugestion is that these doormen (or "bouncers") are so big and muscular that they look as though they take a lot of steroids.

It's a metaphor to suggest that these guys are really strong.
