To give some context, there is talk of aeroplanes and general fear in earlier passages but it's not clear whether the protagonist was ever in a crash or just dreams of it. I'm just not sure how to totally understand the 'siempre estrellaba en el sueño' part

Difficult to tell without further context (I know you said that you have not been provided the whole story). But what I gather is that he did have an emergency landing in real life but he has a recurring dream where the emergency landing is unsuccessful and the plane crashes.

Asker: Yes i think that was about how I translated it as a first attempt, but I just wasn't sure if I had missed something in terms of whether it was a real or imagined emergency landing, or even whether 'estrellar' had some other meaning in the contexts of dreams. Thanks

I managed to get through the emergency landing which, in my dreams, had always ended with a crash


Explanation:
It seems that the intended sense of "superar" in this particular context is that of "survival" (i.e., coming out alive - or at least fully conscious and in one piece - after the emergency landing) and I think that "managed to get through expresses this idea more naturally than either "got over" or "overcame" here.

Finally, I think the pluperfect tense is necessary here to describe the previous reiterated dream scenario in which the plane ended up crashing.
